Life is crazy around here. Can you tell considering it the evening and you are getting a post from me instead of my normal 7am posting?! With school out and activities and camps starting, our schedule is kind of hectic as we try to settle into a good rhythm. We love mac & cheese in our house. I don’t get to make it from scratch as often as I like but I try to make a big batch and then freeze it for later use at least once per month. Since we eat it a lot, I like to try and change it up from time to time and go beyond a basic macaroni and cheese. Turkey, Spinach and Macaroni Bites

Weeknights around here are crazy. I get home just in time to cook dinner and then it is time to check homework, take showers and get the kids in bed. I like to spend as much quality time with the kids as I can so I aim for meals that are delicious but easy to make. Right now, the only thing my four year old will eat with a spoon is guacamole so I have to make sure we have some finger friendly foods on the table too. I spend a lot of time trying to think outside of the box to ensure he gets more than just chicken nuggets and French fries. One of my favorite ways to get vegetables into him {and his sister} is to mix them with some of their favorite foods. That is how I created these turkey, spinach and macaroni bites.

As a kid, I ran away from anything that had avocado in it. It was one of those ridiculous situations where I had never really tried an avocado but was convinced I didn’t like it. Thankfully, as an adult, I became a little wiser and fell in love with avocados. I eat them on toast, in salads and, of course, in guacamole. I have also started cooking with avocados more and it all started with this creamy baked avocado pasta.

One Pot Chicken Enchilada Pasta

I think every family has a go to food that they make over and over because everyone loves it. In our household, that is pasta! While I may prefer something like a butternut squash and sage pasta and Mathlete likes the sausauge and pepper version, we can all agree that pasta is what we want for dinner. Plus, pasta cooks fast making weeknight meals way easier to actually get on the table on time. How about we make it EVEN easier though by making a one pot chicken enchilada pasta?

Spinach Artichoke Pasta Bake

We are total pasta lovers in our house. From spaghetti with just a bit of olive oil and Parmesan cheese to easy pasta bakes or even rigatoni with butternut squash, we like to have pasta at least once or twice a week. Of course, we try to change it up from time to time and try out a new recipe. I was dreaming of some spinach artichoke dip one night and decided to make a spinach artichoke pasta bake instead.
