Back to school doesn’t have to mean more fast food! Make a delicious dinner of Turkey Taco Cups in under 30 minutes that everyone will love!
With school back in session and all that comes with it {homework, after school activities, PTA, etc.}, dinner can fall pretty far down the list of priorities. That typically means more take out and/or more trips to fast food restaurants. BUT, it doesn’t have to be that way!
In fact, #PillsburyBiscuits makes it super easy to get a delicious meal, like this Turkey Taco Cups recipe, to the table in a very short time.
One of the great things about cooking is that it is pretty easy to change recipes to suit your family or time availability without too much effort.
I started out with this recipe for Grands! Taco Melts from Pillsbury and changed it into my own Turkey Taco Cups because I knew the little muffin shape would be a hit with my family.
Ok, so those little babies come together in under 30 minutes from start to finish! Throw some salad or even frozen peas on the plate and you have a full meal.
Even the busiest family can throw together a meal in 30 minutes. Get the kids involved smashing breakfast biscuits for you and you’ve got a family meal perfect for any school night. Psst…they make great leftovers too! I sent some to work with my husband the next day 🙂

Essential items to make these ground turkey tacos:
- Muffin tin
- Skillet
- Kitchen utensils
- 2 large cans Pillsbury Grands! Homestyle Biscuits
- 1 Zucchini finely chopped
- 1 lb Ground Turkey
- 2 packages Lower Sodium Taco Seasoning
- 2/3 cup Water
- 1/2 cup Shredded Mexican Blend Cheese

Preheat your oven to 350 degrees.

Press each biscuit with the palm of your hand to make a 5 1/2 inch round circle.

Push the circle into ungreased muffin cups. Do this for all 12 muffins cups. Reserve any leftover biscuits for later use.

In a large skillet, brown the ground turkey. Add onion and zucchini and cook for 1-2 minutes. Drain if necessary {I use 99% fat free turkey so I rarely need to drain it}.

Add taco seasoning and water to the skillet and simmer for 5 minutes.

Spoon meat mixture into prepared biscuit cups. Top with cheese. Bake in 350 degree oven for 10-12 minutes until biscuits are lightly browned.
