A classic pancake can’t be beat for breakfast or brunch! This puts a fun twist on classic pancakes to create vanilla pancakes with blueberries: a dish that is out of this world delicious!
Have you noticed that so many things these days seem to be some crazy concoction of flavors? I was out the other day and saw strawberry caramel chocolate pretzel flavored ice cream. Now, I love all of the flavors sure and do enjoy some flavors mixed together {salted caramel or strawberry lemonade anyone?}. But, sometimes I feel like more traditional flavors like vanilla get a bad rap. They get labeled as boring or plain. Well, I’m going to #TakeBackVanilla and it starts with these delicious vanilla pancakes and blueberries.
Vanilla has such a complex flavors. If you’ve ever smelled a fresh vanilla bean, the aroma is incredible. There is certainly a reason why those little beans are so crazy expensive!
Vanilla doesn’t have a strong, overpowering flavor but it is subtle and classic which makes it the perfect compliment to things like coffee and the perfect thing for adding into recipes. I love to cook so my vanilla moments often come when I making things like classic dishes that have become family favorites!
Weekends are typically pancake days in our house and, thanks to my mom’s blueberries bushes, we always have a ton of blueberries in the house. So, this past weekend, I decided to make vanilla pancakes with blueberry compote.
These pancakes were so good and will be a weekend staple in our house for sure! I usually pair mine with a cup of iced coffee or juice.

- 1 cup flour
- 2 tsp baking powder
- 1 tsp salt
- 1 cup Coffee-mate Classic Vanilla liquid creamer
- 2 Tbsp butter melted
- 1 large egg
- 1 Tbsp butter
- 2 Tbsp sugar
- 2 Tbsp brown sugar
- 2/3 cup blueberries
- 1 Tbsp Coffee-mate Classic Vanilla liquid creamer

1. In a small bowl, combine the flour, baking powder and salt. Set aside.

2. In a large bowl, whisk together liquid creamer, butter and egg until well combined. Whisk in dry ingredients until just mixed. Some lumps will remain.

3. Heat a large nonstick skillet over medium heat. Rub with an oiled paper towel if desired. Add about 1/4 cup batter to skillet and cook until tiny bubbles start to appear and burst, about 2 minutes. Flip pancake over and cook until lightly browned, about 2-3 minutes. Repeat with remaining batter.

4. While pancakes cook, add butter, sugar and brown sugar to a small saucepan. Heat over low heat and stir until sugars dissolve. Add berries and bring to simmer. Simmer, stirring occasionally, for about 5 minutes. Remove from heat and stir in Coffee-mate.

Vanilla can elevate a lot of recipes. I get a bottle from somewhere tropical on my annual company trip. Cookies, pancakes, waffles … I use it so much I need to get two bottles next trip.
