Creating a delicious party appetizer that doesn’t require a ton of work to put together and can survive through an entire party is no easy feat. With these watermelon brie bites, you can wow your guests with a unique brie appetizer paired with fresh, summer watermelon that no one will be able to resist. Bonus: They are perfect one bite appetizers so no utensils are needed.
My family loves watermelon. How about yours? I usually buy a watermelon each Sunday and the kids enjoy it all week long. Of course, we do end up with extra watermelon so I am always searching for ways to use it!
We love to have friends over during the summer to hang out on the deck and so I figured creating watermelon appetizers were the perfect way to use up my extra watermelon!
A lot of people combine watermelon and feta and that tastes delicious together. I had some leftover brie after making my peach brie dish, a fantastic brie appetizer, the other day and decided to give it a try with the watermelon. It tastes amazing.
Most people don’t know but there are a lot of benefits with watermelon nutrition. Even though most of it is made up of water, it is packed with nutrients like
- Vitamin A
- Vitamin B6
- Vitamin C
- Lots of lycopene
- Lots of antioxidents
A few other great watermelon facts to consider:
- Watermelon has only 40 calories per cup.
- Watermelon is about 92% water.
- Watermelon has several heart healthy components such as citrulline.
- Watermelon has some uses as a recovery beverage after workouts.
- Several nutrients in watermelon are great for skin and hair.
These little watermelon appetizers are absolutely perfect for a summer party or just if you want a little watermelon snack.
You can make the balsamic vinegar syrup ahead of time and just keep it refrigerated until you want to use it. Then, take it out of the refrigerator to warm up a little bit while you cut the watermelon and prep the arugula and brie.

A great brie appetizer is always a party hit. Add some fresh watermelon to create watermelon brie bites for an unforgettable recipe.
- 1/2 of small watermelon cut into small slices
- 1/2 cup arugula leaves
- 1/2 brie wheel rind removed
- 1/2 cup balsamic vinegar
- 3 Tbsp sugar

In a small saucepan, combine balsamic vinegar and sugar. Heat to boiling and then reduce heat to simmer. Simmer until reduced to syrup consistency; about 15 minutes. Let cool.

On a serving tray, layer watermelon slices, arugula and sliced brie. Drizzle with cooled balsamic vinegar syrup before serving.
- Balsamic glaze can be made in advance and refrigerated until needed.
