Happy Wednesday! In our house, Wednesday equals menu plan day. That is how What to Cook Wednesday was born and I look forward to it each and every week. Finding menu plan ideas for myself and, then, sharing them with you is always super fun. Although, I will admit I get a little hungry looking at all this delicious food 🙂

Now, let’s look at some foooooddddd
Sunday: Mathlete loves Greek food. So, it only makes sense to make sure he gets some of it on Father’s Day. This year, I’m thinking Greek style grilled pork chops will be on the menu.
Monday: Sweet potatoes tend to be considered a winter food but I think, making them into sweet potato falafel sounds like a great summer option.
Tuesday: The veggie meals continue with a veggie sandwich slathered in rhubarb barbecue sauce.
Wednesday: Quesadillas are such an easy meal to make and pack a lot of flavor in them. Hawaiian BBQ quesadillas, topped with pineapple mango guacamole, sound so delicious and are a perfect mid-week meal.
Thursday: Asparagus is all over our farmer’s markets right now! I think throwing some into creamy pasta with asparagus and bacon will be a great way to use up some of what I bought.
Friday: For a lot of families {mine included}, Friday is usually pizza night. I love this non-traditional take on pizza for a fun dinner: margherita pizza wheels.
Saturday: Let’s close out the week with a delicious stir-fry filled with asparagus and zucchini and served with salmon and soba noobles.
