I love food and I really love to cook. Working full time + two kids leaves me very little time to actually cook. I wrote about how I plan out meals each week to try and still squeeze in some cooking in our busy schedule.
Each Wednesday, I’ll share a week of meal ideas here (they’ll run Sunday to Sunday for our household). It won’t always be dinners and I can’t promise you won’t see a repeat or two but, hopefully, it will help give you some ideas of what to cook in your own house (that is, if you want to cook!).
This week, I am really focusing on quick and easy dinners for next week. With Sunday being a holiday and our beach vacation coming up fast, I know that we will even busier than usual.
Sunday: Rosemary Rubbed Pork Chops + Polenta + Steamed Whole Green Beans (we’re big fans of the Steam Fresh variety to save a little time)
Monday: (Its Memorial Day so I am thinking cook-out!) Hamburgers (love this recipe) + Broccoli and Feta Pasta Salad
Tuesday (frequently our pasta day!): Pasta with Roasted Broccoli, Garlic and Oil
Wednesday: Thai Barbecue Chicken with Cilantro + Cucumbers Caesar + Basmati Rice (we usually just pick this up on our way home as take-out)
Thursday: Rosemary Grilled Steak with Tomato Jam + Grilled Vegetables (read a great tutorial on making “the world’s easiest grilled vegetables”.)
Friday: Tuna Kebabs with Ginger-Chile Marinade + Steamed Edamame
Saturday: (first day of beach vacation!) Chicken Parmigiana Burgers + Baked Seasoned Fries + Steamed Green Peas (again…gotta love the steam in the bag frozen version!)
