September has been an absolute whirlwind around here. School started again along with a ton of after school activities. Add in me trying to go to an exercise class with a neighbor twice a week and you have an all out bonkers schedule. There are at least 3 days in our week where dinner time becomes kind of like pit time at the race track so I need recipes that are fast, easy and delicious. I am so in love with this zesty chicken and rice soup because it is all of those.
In addition to make an awesome weeknight meal, this soup doubles as an amazing lunch too. I always worry about pasta and rice in soup getting soggy the next day but, with the Minute® Ready to Serve Rice cups, I can take the soup and rice separate and combine them right before I heat my lunch. Soup is the perfect lunch option for our cooler fall temperatures too.
Zesty Chicken and Rice Soup Ingredients:
1 Tbsp oil
1 onion, finely chopped
2 cloves garlic, minced
1 cup shredded carrots
1/2 Tbsp cumin
1/2 tsp chipotle chili powder
1/2 tsp coriander
1/2 tsp cardamom
4 cups chicken broth
3 cups cooked, shredded chicken
1 can mexicorn
Juice and zest of 1 lime
2 Tbsp cilantro, chopped
1 package (both cups) Minute® Ready to Serve Multi-Grain Medley
Let’s Make It:
1) Heat oil over medium heat in large soup pot. Add onion and carrots. Saute for 2-3 minutes. Add garlic and cook for an additional minute. Stir in all spices and cook for 1-2 minutes.
2) Stir in broth and bring to a boil. Reduce heat to low and simmer for 15 minutes. Stir in chicken and corn and cook for 5 minutes. Remove from heat and stir lime zest, lime juice, cilantro and rice.
If you are not going to eat all of the soup at once, you can also add rice to the bowls and then ladle soup over top. Since Minute® Ready to Serve Rice only takes 60 seconds in the microwave, the hot soup will easily cook it to perfection without any additional cooking time.
